from the Bakewell Cream Cookbook

Blueberry Buckle

  • 1/2 cup shortening
  • 1/2 cup sugar
  • 1 beaten egg
  • 2 cups flour
  • 1-1/2 tsp Bakewell Cream
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup milk
  • 2 cups fresh blueberries
  • crumb topping (see below)

Instructions: Cream shortening and sugar together. Add eggs and mix well. Sift dry ingredients together and add to egg mixture along with milk. Mix well. Pour into greased 11-1/2 x 7 x 1-1/2 pan. Top with blueberries. Sprinkle with crumb mixture. Bake in a 350-degree oven for 40-45 minutes.

Crumb Topping

  • 1/4 cup sugar
  • 1 tablespoon flour
  • 2 tsps cinnamon
  • 2 tablespoons butter or margarine
  • 1/4 cup chopped nuts
